
The art of good eating plays a predominant part in the many services offered by La Constancia.
One of the fondest memories we have of our travels is the food we have enjoyed. The different ingredients and their combinations, the way in which they are condimented, and how they are cooked, makes each region, even within the same country, a world of it's own.
Under the direction and careful supervision of Chef Luis Dorado, a graduate of the Argentine Institute of Gatronomy, many different dishes are prepared for the enjoyment of our guests who visit our estancia day after day.
Our food may be basically described as "home gourmet", with it's roots in Argentinian and international traditions, all dishes prepared with the best products that each season has to offer, together with home- grown fresh herbs.
Our generous breakfasts, consisting of natural fruit juice, yoghurt, orange or lemon cake, scones, chocolate- chip biscuits, french rolls, toast, cheese, ham, and homemade jams, provide the energy necessary to undertake the day's activities.>
Some of our dishes:
Starters: Home-baked bread with wild mushrooms. Bruschetta of sardines, onions and capers. Carrot loaf with thyme cream. Capresse salad. Esparragus and cheese crepès with glazed tomatoes and basil.
Main Dishes: Vegetable lasagna with a four cheeses sauce. Scallops of veal with lemon sauce and vegetable tians. Fillet steak stuffed with bacon, onions in red wine, glazed carrots and farm potatoes. Chicken casseroled in a pumpkin. Steak milanese with ratatouille. Humita ( similar to a tamale, made with sweet corn and melted cheese.) Goulash with spatzle (a coarse noodle from Alsace and Germany).
Desserts: Lemon ice-cream cake. Strawberry Bavarois. Caramel and nut crèpes. Chocolate mousse with roasted hazlenuts. Caramel mousse with bananas glazed in rum. Puff pastry cake. Green apple flan. Chestnut pudding.
Asados: (Argentine barbecue). No Argentinian menue would be complete without the justly-famed asado. While the asado is being prepared, enjoy our pasties and a variety of appetizers such as different cheeses perfumed with fresh herbs and olive oil, homemade patés, cold cuts and spicy sausages. The asado consists of lamb, suckling pig, and special cuts of beef, either barbecued in the traditional fashion, or grilled on a griddle, with grilled vegetables and a wide choice of salads. Dessert: Seasonal fruits sautéd in rum and served with cream.
To end each meal, you can enjoy herbal teas made from sun-dried herbs gathered from the hillsides surrounding the homestead.
